The legend of eight points

In the Sonoran sierra, only a few deer ever grow eight antler points.

In harsh country, the white-tailed deer survives through strength, instinct, and endurance. It stands for character and freedom. Inspired by that untamed spirit, Ocho Puntas Bacanora honors northern Mexico with an expression that is authentic, bold, and refined.

For decades, Bacanora was made in secret, in ovens hidden deep in the sierra. We bottle that same resolve.

Its character is born among mountain, desert, and fire, where nature demands strength and only the steadfast endure.

The process · from agave to bottle

Eight points, eight steps.

At our distillery in Álamos, Sonora, we combine the craft of bacanora with modern equipment and control at every stage: from mountain agave to the bottle.

  1. 01

    Harvest and weighing

We harvest mature Agave angustifolia Haw. from the Sonoran sierra. Every load is weighed and logged at the distillery before it enters the process.

  2. 02

    Cooking

The agave hearts are steam-cooked in a masonry oven fueled by LP gas. Even, clean cooking that turns the agave's starch into sugars.

  3. 03

    Milling

A stainless-steel shredder breaks the cooked hearts into fiber and sweet juice, ready to ferment.

  4. 04

    Fermentation

Three to seven days, with controlled water and yeasts: a level of care traditional production lacks, giving every batch a consistent profile.

  5. 05

    Distillation

Double distillation: first in a stainless-steel still, then in copper, where we separate the heads and tails and keep only the heart.

  6. 06

    Aging

The joven is diluted with water to bottling strength. For the reposado, the spirit is kept at 50% ABV and rests in barrels.

Our Bacanoras

Two expressions of the same desert.

A joven that keeps the pure character of the agave, and a reposado that rests in the barrel. Both 100% agave from the Sonoran sierra.
